All this was because he was overweight; thus, his doctor advised him to shred at least 60 pounds of flesh to stay healthy. His doctor suggested a three-part strategy: a new diet, exercise, and medicine. Joe then took off on his journey to get rid of his health problem through exercise and healthy eating habits. Within just a year, he was able to lose most of the weight his doctor had suggested. 

"When I stopped looking at food as a reward or a celebration and began looking at food as energy to fuel my athletic ambitions, that really kind of changed the whole world for me," Joe said in an interview with Epicurious. "That was the real aha! moment."

Moreover, his one-year journey turned him into an athlete. He began running at least 10 miles each day. By 2010, he had completed one Los Angeles Marathon and two New York City Marathon. In addition, he also competed in the 2011 Ironman World Championship.

Joe now consumes a greater amount of healthy food, including whole grains, fresh fruits, and veggies. He also eats steak and pasta, albeit in smaller servings. Moreover, Joe has also modified the menus of his restaurants.
